Our wheels touched down just outside of Negombo, Sri Lanka. Our first Sri Lankan nights were spent in a homestay with wonderful hosts who entertained us with good conversation and delicious breakfast potato curry topped with sambola, a condiment of fresh shredded coconut from the garden, onion, lime and chili pepper. Dushan, our host, also gave us instructions to visit the local fish market. We are thankful he did. The market was a vibrant experience for the eyes and nose. We were thrilled to watch the process of cutting, brining, salting, drying and packing of thousands of fish. The market was like nothing we’ve seen before and a true joy to experience.
